my cherry amour…

I love tomatoes. Whether they’re beefsteak, heirloom, grape, or cherry, I love them.

Cherry tomatoes are a favorite. They require virtually no prep at all and are the perfect serving size. Often found in salads, these bite-sized gems are readily available. The variety I often purchase is called “Sun Sweet.” As its name implies, it’s ripened on the vine and is sweeter and less acidic than other tomatoes.

I sometimes eat them like real cherries and have them as a snack. One of the dishes I like to make is a stuffed cherry tomato.

Their little tops are cut and the flesh is scooped out to make room for the stuffing. As for the stuffing itself, I usually will make a pesto or duxelles. Feeling a little playful, I did my take on the classic BLT.

I sautéed shallots, breadcrumbs and lettuce (the “L”) for the stuffing. Crispy bacon (the “B”) was added for texture and smokey flavor. It was quick, yummy, and fun to eat—almost like eating popcorn!
