White chili is just that: white.

It is white because it’s cream-based and uses only ingredients with lighter hues. Shredded chicken replaces beef and no tomatoes are add. To save time, I used store-bought rotisserie chicken. Typical spices such as ground cumin, Anaheim chile powder, and Mexican oregano are used to give it the familiar chili flavor.

Other ingredients include, white corn, jalapeños, Great Northern white beans, sour cream, sweet onions, and garlic. To serve, add fried tortilla strips, chopped cilantro, and fresh squeezed lime juice.

I call it “White Lightning” because its unassuming appearance belies its true heat content.
