my case for quesadillas…

I made rotisserie chicken the other day and as usual, I had plenty of leftovers.

Often, I would make a pot of chicken noodle soup. But since this past week I’ve had soup more times that I can count, plus it would’ve involved me spending more time in the kitchen than I would care for, I went the easy route. I made quesadillas instead.

Luckily, I had all the fixin’s I would need to make them: tortillas, cheeses, avocados, and home-made pico de gallo.  So in less than ten minutes, I had a crunchy and cheesy chicken quesadilla.

With my quesadilla stack on my beloved TV tray, I sank into my favorite chair and watched Iron Manon DVD. Life really ain’t that bad…
